Rava Kesari


Ingredients:

Rava/Sooji - 1 cup
Ghee - 1 cup
Sugar - 1.5 cups
Water - 2 cups
Cashew/Almond/Dry Grapes/any nuts - 2 tbspn ,Chopped
Food color - a pinch

Method:

1. Heat a tbspn of Ghee in a pan and Mix in the sooji until it incorporates well and tranfer it to a seperate bowl.
2. Bring the water to a Boil in a Non-Stick pan and add the food color to it.
3. When the water is in rolling boil,Add the sooji and Mix it continuosly without any lumps.
4. When the sooji absorbs all the water,add the sugar and mix it well.
5. Meanwhile,Take a seperate pan,add the remaining Ghee and fry the Nuts and dry grapes,until it turns brown.
6. When the sugar dissolves,add in the fried Nuts and Dry grapes.
7. Enjoy with chopped raw nuts and sprinkle some sugar.

Avocado-Celery Green Soup(Healthy)


Ingredients:

Celery - 3 sticks,Chopped
Avocado - 1,medium
Chicken/Vegetable Stock - 1cup
Onion - 1/4,chopped
Garlic - 2 cloves
Cumin Seeds - 1tspn
Yogurt - 1 Cup
Salt &Pepper - to taste
Olive oil/Ghee/Butter - 1 tspn
Green chilli - 1,optional

Method:

1. Heat the oil in a sauce pan,Add the cumin seeds and let it splutter and add in the Onion,Garlic,G.chilli and fry for 2mins or until the raw smell leaves out.
2.Add the Celery fry for 3mins in a slow flame and add the stock and switch off the flame when it comes to a boil.
3.Let it cool and Grind it with Avocado,salt and some yogurt.
4.Serve it with some chopped parsely,pepper and yogurt
5.Enjoy with some croutons/Garlic bread.

Salmon Fry



Ingredients:

Salmon - 2 fillets
Lemon - 1,sliced
Lemon Juice - 2 tspn
Turmeric - a pinch
Salt and pepper - to taste
Red chilli flakes - to taste
Olive Oil - 2 tbspn or as required for frying

Method:

1. Wash the salmon with turmeric in running cold water
2. Mix the salt,pepper,flakes,1 tbspn Olive oil in a bowl and marinate the Salmon for 1/2 hour
3. Heat the oil in a wide pan and fry the fish one by one or by batch
4. Once the fish is done,add the lemon slices into it and fry for a min and use this for garnishing.

Serve it with green beans or Broccoli or with Rice.

Celery Chutney

Ingredients:

Celery - 1 whole stock
Corainder leaves - 10 sprigs
Cumin seeds - 1tspn
Green/Red chillies - 2 or 3
Garlic - 3 cloves
Ginger - 1 inch
Salt - to taste
Oil - 1+1 tspn or as required

Seasoning:

Mustard seeds - 1 tspn
Urad dhal - 1tspn
Channa dhal - 1 tspn
Curry leaves - 1 sprig
Red Chilli - 1
Hing - a pinch

Method:

1. Heat the oil in a wide pan, fry the cumin seeds,Ginger,Garlic,Chillies, celery and the coriander leaves for 2-3 mins or until tender
2. Once done, let it cool and grind it
3. Again heat the remaining oil in a pan and fry the seasoning ingredients and mix it with the ground paste.

Serve with Dosa, Idly.

Tomato Gravy (Thakkali Kurma)


Ingredients:


Tomatoes - 2 medium,chopped
Onion - 1 large,thinly sliced
Red/green chillies - 2,slit
Curry leaves - 1 sprig
Mustard seeds - 1 tspn
Channa Dhal - 1 tspn
Hing - a pinch
Coriander leaves - for garnishing
Salt - to taste
Oil - 2 tspn

To Grind:

Tomatoes - 2
Ginger - 1 inch
Garlic - 2 cloves
Grated Coconut - 3/4 cup
Roasted Channa - 1 tbspn
Red chilli powder/Sambar powder - 2 tspn
Corainder powder - 3 tspn
Curry leaves - 1/2 sprig

Method:

1. Grind the ingredients coresly which are given in To Grind column
2. Heat the Oil in a pan and pop the mustard seeds and add the channa dhal,hing,curry leaves, red/Green chillies and fry for 1min
3. Add the Onions,fry for 2mins or until its light brown
4. Add the Tomatoes and fry until it leaves out all its water and Now add the Ground paste to it and fry for 3mins
5. Add water as required for the consistency and cover and bring it to the boil.
6. Finally add the salt and coriander leaves.

Serve hot with Idly,Dosa,Poori or even rice.
