Paella - Spanish Rice


Ingredients:

Chicken - 1 lb
Shrimp - 1 lb
Rice - 1 cup ,preferably long grain Rice
Chicken stock - 2-3 cups,preferably low-sodium and fat free
Onion - 1,chopped
Tomatoes - 2,Chopped
Red Bell Pepper - 11/2,thinly sliced
Frozen peas - 1/2cup
Chilli powder - 1tspn
Turmeric powder - 1/2tspn
Coriander powder -1tspn
Black pepper powder - 1 + 1tspn
Oil & Salt - to taste
Coriander leaves - for garnishing

Method:

1. Heat the oil in a wide skillet
2.Fry the onions until transulent and add the Tomatoes,fry for 1min
3.Add chicken and half salt to it and cover the pan for 2mins
4.Now add the powders ,Bell pepper fry for a min and add the rice,Peas,chicken stock
5.Mix it well and cover and cook until the rice is done
6.In the Meanwhile , Heat the oil in a seperate pan,add the Shrimp and season with salt and pepper ,toss it and cook for 2-3mins.(Do not over cook the shrimp)
7.When the rice is done,mix the cooked shrimp in to the pan and cover it.finally switch off the flame right away.
8.When serving, garnish with remaining pepper and coriander leaves.
Note: Any kind of meat or Sea-food can also include in this rice.
